Darwin's proximity to the Northern Territory coastline means extraordinary seafood: Barramundi is the signature fish, and is best eaten fresh (not farmed). Mud crab and reef fish are also outstanding. The Mindil Beach Sunset Market (Thursday and Sunday evenings during the dry season) is a must for seafood and Asian street food.
Darwin's specialty coffee scene is relatively small but has grown. 9th Lane, Charlie's of Darwin, and Catalyst Coffee Co are local favourites.
Tip: Look for specialty single-origin cafes that display their roasters on the menu board.
Darwin doesn't produce wine, but good wine lists are available at the city's better restaurants. The NT does produce some excellent craft beers (Darwin Brewing Co, Buffalo Trace).
Mindil Beach Sunset Market is the definitive Darwin food experience -- Thursday and Sunday evenings, May to October (dry season only). Get there early to park and claim a sunset spot on the grass.
